What the fire decides.

We cook the way a fire wants to be fed — patiently, and only with what the day brings to the door.

CENDRE is one room, one hearth, and one menu that changes as often as the season demands. There is no printed list of choices because there is no choice to make. You sit, you trust the fire, and the evening unfolds in its own time.

Everything begins at the wood pile. The ember bed is built in the afternoon and never allowed to die until the last plate leaves the pass. Heat is our only shortcut, and it is not a shortcut at all.

Whole & nothing wasted

We buy the animal, the field, the catch entire. What isn't plated tonight becomes tomorrow's stock, cure, or ferment.

The season decides

A menu written in pencil. If the morning delivery is better than the plan, the plan changes before service.

One unhurried evening

Twelve courses across roughly three hours. The table is yours for the night — we will never rush you from it.

Low light, long tables, one open fire.

Thirty-four seats wrap a single open hearth. The kitchen has no wall — the cooks work in the same room you dine in, and the fire is the only thing that moves quickly.

We built the space to disappear: reclaimed oak, hand-thrown stoneware, candle and ember for light. Nothing on the table you did not come for. The evening is meant to feel like being cooked for at a friend's house, if that friend had spent a decade at the pass.

Conversation carries here. We keep the music low and the room warm, and we would rather you stay an hour past the last course than feel moved along.

Choose an evening, a seating and a party size. Tables are released one lunar month ahead and go quickly.

Service
Wednesday to Sunday. Monday and Tuesday the fire rests, and the form will say so if you pick one.
Seatings
5:30 and 8:30 pm. Twelve courses, about three hours, and the table is yours after that.
The table
Up to eight guests through this form. A larger party takes the whole room, so write to us instead.
Allergies
Tell us when you write and the kitchen cooks a parallel evening. Vegetable and pescatarian menus on request.

Tables are released twenty-eight days ahead.
